Whole Anchovies. Processed on the Spot.
The firm behind these delicate canned fish was founded by Agostino Recca in Sciacca in Sicily in the 1930ies and has been producing salted anchovies for four generations. The small Engraulis encrasicolus herring are carefully filleted by hand on the same day they are caught and pickled in brine from sea salt, producing the pink colour and juiciness of the meat. In these cans are whole fish with their tails, somewhat larger than the commercially available anchovies in a jar. They have a firmer, meatier consistency, and, with some olive oil on toasted white bread, they are delicious. We recommend refilling the contents from an opened can in a jar with some water and coarse sea salt (with its higher magnesium content, sea salt conserves the anchovies better than table salt), and storing the jar in the fridge.

75% anchovies, 15% salt, 10% brine.
Store unopened in a cool and dry place. When opened, please store in the refrigerator.
