Couscous is made from little balls of grit. Ours is made of barley and comes from Morocco, a country, where it is ubiquitous. In contrast to the usual couscous made of durum wheat semolina, it is distinguished by a striking buttery-nut flavour. It has a fine-grained texture and won't form clumps.
