Since 2009, Kent & Fraser in London have dedicated themselves to the handcrafted production of small wheat and gluten-free biscuits. They call their cheese biscuits Criscuits, a fitting description for a texture between a cracker and a biscuit. The dough is made of rice, potatoes, corn and tapioca flour, butter and hard cheese. The tone of the individual taste is set by certain herbs and spices. The rich, buttery Criscuits go well with dips or cheese or can be simply enjoyed for themselves.
