Baci di Cherasco
A Piedmont Delicacy with Hazelnuts and Chocolate.
In almost every small town in northern Italy there is a biscuit or chocolate that goes by the name “Baci di ...”, i.e. “kisses from ...”. Worthy of attention is the following delicacy from the small Piedmontese town of Cherasco. Its basis: hazelnuts from the variety “Tonda Gentile delle Langhe” (i.e. the “round noble [nut] from the Langhe region”), the highly aromatic queen of hazelnuts. The manufacturer applies a gentle roasting process in wood-fired ovens; then the hazelnuts are coarsely crushed and mixed with exquisitely tasting bitter chocolate, flavoured with a little vanilla. The resulting chocolate delicacies taste intensely of hazelnuts, cocoa and a little of coffee. They come from the “Confetteria e Pasticcheria Barbero”, founded in 1881. Barbero, still located in Cherasco, has the chocolates handmade and passionately produced according to the traditional Piedmontese art of confectionery.
