This cheese dish is made by Waechtersbach, the ceramic works founded in 1832 in Hesse. It is earthenware and only the base and the exterior of the lid are glazed. By watering the unglazed interior surface, you can generate a humid climate, which in turn prevents the cheese from drying out. The shape of the lid and the ridge in the base provide sufficient ventilation, so that cheese can be stored or matured in a suitable climate.
