Ange Pucci is one of the few fruit-growers in his region who still has an orchard with old lemon and bitter orange trees, cultivated for flavour, not maximum yield. This is surprising, since the area around Nice is really the home of bitter orange marmalade, even though it later became the epitome of British cuisine. When tending, harvesting and processing his fruit, Pucci stubbornly adheres to the methods he learned from his forefathers. So his marmalade production involves a huge amount of manual work which means that no more than 20 kilos of marmalade can be made in three days.
