Forged carbon steel cooking knives with a narrow heel. Every time we offer these venerable knives, they sell out within days. Now Herder are making them again - drop-forged kitchen knives made from carbon or crucible steel according to technical specifications from a 1922 range. The considerable effort which goes into making these knives used to be taken for granted, but is now less common.
They are drop-forged with a full tang and narrow heel, then ground further until blue-glazing. The triple-riveted handles are made from polished cherry. Experts agree: there is nothing better.
Rust never sleeps: under no circumstances should carbon steel knives be put in the dishwasher - this would make them rust quickly and ruin the exquisite cherry wood handles. The steel will discolour for a short while upon being subjected to foodstuffs with high acid contents (citrus fruits, apples, fish), and these may assume a mildly metallic taste. However, this reaction is neither a concern for the stability of the knives nor for the health of those eating the food. Carbon steel knives require, and deserve, careful handling.
